Good Gracious! Company’s Coming Cheese Straws

Ingredients:

1 pound (4 cups) freshly shredded sharp cheddar cheese (gotta be sharp!)

1 cup salted butter (yes to salted)

1-1/2 teaspoons salt

4 cups all-purpose flour

½ teaspoon cayenne pepper

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

1/8 teaspoon black pepper (or white if preferred)

Instructions:

Preheat oven to 350 degrees F. Line your baking sheets with parchment or silicone sheets. Break out your box grater and go to town grating that sharp cheddar cheese on the fine side of the grater. When finished, (usually when your arm starts to hurt), cover and let it come to room temperature.

Add the butter and cheese to a stand mixer bowl and paddle beat for about ten minutes until creamed together.

Add salt, flour, cayenne pepper, smoked paprika, garlic powder, onion powder, and pepper l and mix on medium speed until fully combined.

Transfer dough to a cookie press fitted with a star tip (if you want your straws to look fancy). Or you can hand-roll long thin strips and cut into uniform lengths (about 3 inches) with a knife.

Bake for 12-14 minutes until lightly-browned. Let cool for 5 to 10 minutes. Then transfer to a wire rack to cool completely.

Interview with Linda

When did you know you wanted to be a writer?

I’ve always written, but I realized in 2003, 2004 that I really wanted to write a book and I feel like God birthed that dream in me. Before that, I was discouraged because I didn’t know how to go about pursuing that dream‑from the mechanics of writing an actual book, how to go about selling an editor on my writing etc. I started a writing group with another woman interested in the same thing and we began to connect with authors and others in the biz. As we learned more and more about it, I realized that with God’s help I could do this. But I had a lot to learn and I had to work hard.

 

Where did you get your inspiration for your latest book?

Honestly, the inspiration came from my morning quiet time with the Lord. Just randomly studying my Bible and running across something interesting. I reference and cross-reference and dig until I find something incredible. Then I find an angle to make it as interesting to readers as it is to me. Of course I add humor because that’s who I am. Humor is part of my voice and I have found that people are more apt to learn and accept God’s truth when there’s a bit of lightheartedness or a story attached.

 

How does your faith and spirituality work in your writing?

I wouldn’t be an author without my strong faith. Sure, I worked hard, but there are plenty of wonderful writers out there who work hard too. You need faith to write and faith in God to bring you places you could never go on your own.

I teach a women’s Bible study, called Babes With A Beatitude for going on 31 years now. We don’t teach from any set lesson. We just study the Bible. All the lessons are fresh, straight from God’s Word. That’s where my inspiration comes from.

 

What is your favorite Bible verse and why?

Jeremiah 15:19 KJV  “…if thou take forth the precious from the vile, thou shalt be as My mouth…” I take that bit of scripture and apply it to my life. When things go wrong in life or in my writing, I look for something positive to learn from it. Extract something precious from the vile things that happen, and then use it in a positive way in your life or to help others in their struggles.

 

What advice would you give to new authors?

My advice is to not give up. Keep learning your craft. Continue writing. Persevere through every rejection and discouragement. Pray and praise God every day in every way. Stay close to Him and He will take you places you never thought you’d go and use you to do mighty things for His glory and to win souls to His kingdom.
